Wild Rice & Kale Salad!

Are you a closet kale hater?  I know…I know…what the hell is the obsession with kale?  Well it’s like the king of all cancer fighting cruciferous veggie dudes for one thing, but if you think you hate it, try this and I’ll guarantee you will be influenced.  It’s one of my most popular recipes in my cleansing book arsenals and m’ladies often tell me that they crave it.  You can’t get more loving than that!  if you think you really hate kale, replace the red peppers with dried cranberries or currants to sweeten things up even more.

But you really don’t need to, in my humble opinion.

This is one of my favorite go-to lunch salads. Add some leftover grilled chicken or salmon and you have a perfectly balanced lunch! I make a big batch and it keeps for 4 days easily.

Wild Rice & Kale Salad
1 cup cooked wild rice 
8 cups kale shredded
1/2 cup red bell pepper diced
1/2 cup green onion chopped
Dressing
3 tbsp lemon juice
3 tbsp olive oil
2 tsp sea salt
1 tsp ground black pepper

Steam wild rice in water until tender, drain and cool. Whisk together lemon juice, oil and seasonings to make the dressing. Toss the rice with dressing until coated and loose. Add shredded kale and toss, then add remaining ingredients and toss again.

  1. I can’t wait to try this! I’m in the kale lovers club for sure… I can’t imagine how you couldn’t love kale! WHO ARE these people?!!! i even drink the stuff in smoothies and juices!

  2. I love most kinds of greens but have never tried kale. Does it taste like collards? I’ve tried mustard greens and I wasn’t too fond of those and I’m a little worried they’ll taste like those, but I’m pretty good with trying new things. The kale in your picture looks like it’s a little cooked. Is it? I think I might like it a little cooked and make it a warmed salad. Have you tried it that way?

    1. Hey @Angela, it does taste a tad like collards, but it’s hard to exactly describe. If you massage the kale with olive oil and a little salt it softens it and sort of “cooks” it. You totally could warm this salad. Great idea. Add a few teaspoons of honey to the dressing and I think you’ll love it! Let me know if you try it and how you like it! Thanks for visiting!
