Paleo Chipolte Cashew Cheese Dip – Non-Dairy!

Well I’ve got this lovely group of women and men going along with me right now on my annual Clean & Clean Fall Group Cleanse.

And it has been a blast. (and YES, I will be hosting another one in January!)

I love hosting these Cleanses 3-4 times a year, and it’s so much fun to be doing this in a group especially when we’ve got alumni cleansers who are AWESOME as well as new people who are diving in and getting great results and learning how to get excited about whole foods and clean eating in a simple and delicious way, sometimes for the very first time ever.

Each time I run a program there are new food ideas to try and to learn about.  That’s is something I find endlessly inspiring. This luscious, recipe is my favorite recent discovery.

So the other day I was at Aslan Brewing Company ordering a Cleansing lunch (yes you can go out and even to a brewery!) and I ordered my dish: “Non Dairy” and the server brought over a little dish of non-dairy deliciousness for me to try.

It’s becoming more and more common for people to request things a little differently and more and more common for creative restaurants to come up with non-dairy, non-gluten options…which is FABULOUS!

So I got to have my cleansing approved lunch, and to also add a creamy, spicy sauce on top that made it feel like I was having the most indulgent meal ever.  Except that I felt FANTASTIC when I walked out the door knowing I can have my cleanse..and eat it too.

I asked for the recipe but she didn’t have the exact formula, just the list of ingredients.  Well that was fine.  I was so smitten already with the whole experience that I borrowed all the information I could from our generous hostess and created it at home.

It was tested by my whole family last night and it’s a HIT.  And if you know my audience..well let’s just say..these guys are a tough crowd.

It better be GOOD.  Very. GOOD.

So if you are wanting a non-dairy cheesy tasting spicy dip or sauce?

This is your dish.  You can make it thicker or thinner and use it as a dip or as a topping for anything that is asking for a luscious creamy, smokily spicy finish.

Try it!

Stuff You’ll Need:

  • 1 cup raw cashews
  • 1-2 cloves fresh garlic smashed and minced
  • 1-2 chipotle peppers from a can of chipotles in adobo (2 if you want it extra spicy)
  • 1 TBSP fresh lime juice
  • 1/4 tsp paprika
  • 1/8 tsp ground cumin (optional
  • 1/2-3/4 cup water
  • 1/2-1 tsp sea salt (to taste)
  • Fresh ground pepper (to taste)

How To Make It:

You have 2 ways to roll with this.  I went the impatient way.  Either soak the cashews in water for about 4 hours and rinse.  OR the “I can’t be bothered and I have people showing up LIKE NOW” way: Cover cashews in water in a saucepan and simmer cashews GENTLY until soft (about 10 minutes).  Drain and lightly rinse in a strainer.

Add 1/2 cup water to a blender.  I used my Vitamix blender , add peppers, lime juice, spices and cashews and blend until nice and creamy.  Add additional water slowly as needed.  More water if you want it “saucy” and less if you want more of a spread.

Voila! Now you have a creamy, rich sauce you can drizzle on:

Chipolte Salsa Snack

Eggs and salsa over a brown rice tortilla, add to a non-gluten wrap burrito with avocado and sliced chicken, use as a dip for a healthy tricky alternative to cheese on Beanitos chips.  You name it.  Just don’t tell me that being non-dairy means you can’t have your cheese.  This stuff is delicious!
